Saucy Tomato Shrimp

A one-dish skillet meal. Easy and quick… perfect for weekday nights!

4 tablespoons butter
1 medium onion (chopped well)
3 medium sized ripe tomatoes (peeled, seeded and chopped)
3 tablespoons parsley (chopped)
1 teaspoon oregano
Salt and pepper, to taste
¾ cup dry white wine
1-1/2 pounds raw jumbo shrimp (peeled and deveined leaving tail in-tact)

In a large skillet, heat the butter over medium-high heat. Add the chopped onions and saute for 5-6 minutes until soft and browned.
Next add the chopped tomatoes and saute for another couple of minutes. Add the wine, parsley, oregano, salt and pepper and simmer over low heat for 10 minutes.  Reduce the heat to medium-low, add all the spices and the prepared shrimp and cook for 7-8 minutes, or until the shrimp is pink and cooked through.
Serve with fresh steamed broccoli.

Serves 4.
