Broiled Chicken Provencal



Nut Free Fish Free Soy Free Gluten Free 

So simple – but delicious. Use the leftovers atop a salad for the next day’s lunch!

1/3 cup butter
Salt & pepper, to taste
1 teaspoon rosemary
1 teaspoon dried thyme
2 teaspoon marjoram
2 chickens – cut-ups (about 2 pounds total)

Turn on broiler to pre-heat (or outdoor grill).

Melt butter by heating on the stovetop in a small saucepan, or in a microwave safe dish in the microwave.

Combine melted butter and all herbs. Whisk to blend. Baste both sides of the chicken with the butter/herb mixture. Place the chicken, skin side down in a baking pan; Season again with salt & pepper. 

Broil 5 to 76 inches from heat for about 20-25 minutes. Baste chicken with drippings; turn and broil an additional 15-20 minutes.

Serves 6.
