A perfect way to enjoy fresh picked apples! Omit butter to make dairy-free.

Olive oil, to coat bottom of skillet
Four (4) boneless pork chops (about 1” thick)
½ cup of brown sugar
2 ½ teaspoons cinnamon
3-4 medium sized apples (tart variety - such as Granny Smith or Baldwin)
3 tablespoons butter or margarine (omit for dairy free)

Preheat oven to 350 degrees F.

Coat the bottom of a large skillet with olive oil. Over medium-high heat brown the pork chops until nicely browned on both sides.

Remove chops from the skillet and place in a well oiled oven-proof dish.

Next, skin and core the apples. Cut into wedges. Place the apples in a large bowl, sprinkle with the cinnamon & sugar. Toss well to coat.  Place the apple wedges around the chops in the oven proof dish.

Dot the chops and apples with small pieces of butter (omit for dairy-free).  Cover and bake for about 1½ hours, or until the pork is cooked through (internal temperature registers 160 degrees F.)

Serves 4.
