Chickpea & Grape Tomato Salad



Nut Free Fish Free Soy Free Gluten Free 

A perfect combo that serves itself well as a side dish, or spoon it over baby spinach for a super healthy salad.

1 can of chickpeas (drained well, rinsed and drain well again)
1 cup of grape tomatoes, halved lengthwise
2 tablespoons chopped flat leaf parsley
¼ cup red onion diced
¾ cup feta cheese, cut into ½” chunks (Optional – omit to make dairy free)

Marinade
3 tablespoons olive oil
3 tablespoons lemon juice
¾ teaspoon ground cumin
1/8 teaspoon (more or less depending on desired heat) ground cayenne pepper
1 teaspoon grated lemon zest
Salt and pepper, to taste

In a medium bowl, toss together all salad ingredients. Gently toss to combine. Set aside.
In a small bowl, combine all the dressing ingredients. Whisk well, then pour over the chickpea / tomato mixture. Refrigerate until ready to serve.

Serve as a side dish, or over salad greens.

Serves 4.
