Shrimp and Pepper Rosemary Skewers

Perfect mini skewers for get-togethers with family and friends. The rosemary skewers and Marconi® brand Rosemary Infused Oil introduce flavor throughout the shrimp and vegetables. Replace shrimp with chicken if desired - or to make fish free.

24 large shrimp, peeled
2 tablespoons fresh lemon juice
3 tablespoons Marconi® brand Rosemary Infused Oil
2 gloves garlic, minced
1 red bell pepper, cut into squares
Several fresh basil leaves, washed and stems removed
1 yellow bell pepper, cut into squares
Salt and pepper to taste
12 stiff (woody) sprigs fresh rosemary, approximately 5-6 inches each

Mix together the lemon juice, oil and garlic and toss well with the shrimp. Marinate in refrigerator for at least 15 minutes.

Using the rosemary sprigs for skewers, place the shrimp, peppers and basil leaves on the skewers, alternating as you go. Secure basil leaves tightly between shrimp and peppers.

Preheat the grill or broiler.

Salt and pepper to taste. Grill or broil the skewers approximately 2 minutes per side, basting frequently with excess marinade.
