Mexican Turkey & Veggie Wrap



Nut Free Fish Free Gluten Free 

These great little “sandwiches” are perfect when you are all out of gluten-free bread, or looking for something a bit “lighter”. Make sure you stuff it full of veggies for extra fiber, that will fill you up with little or no calories! Omit sour cream to make dairy-free!

2 gluten-free corn tortillas (check label for allergens)
2-3 tablespoons gluten-free salsa (check label for allergens)
1 tablespoon sour cream – optional (omit for dairy free)
4 thin slices smoked turkey (I use Dietz and Watson, or Boar’s Head)
1 cup arugula or lettuce, shredded
1 jalapeno peppers, seeded and finely diced
1-2 tablespoons onion, diced
1 tablespoon black olives, chopped
1 tablespoon fresh cilantro, chopped
1 tablespoon guacamole – optional


Lay each tortilla flat. Spread with salsa, sour cream and guacamole.  Next lay the sliced turkey, and cover with all the remaining vegetables. Top with guacamole, if using.

To assemble, first fold in two sides of tortilla and then roll from bottom into a burrito like shape (or if really over-stuffed, just fold and half). Secure with toothpicks, cut in half, and enjoy!
