WIN-It-Wednesday: “The Gluten-Free Asian Kitchen” Cookbook by Laura B. Russell
Oh how I miss my Asian foods. Dumplings, Crispy Spring Rolls, Mu-Shu Pork, Potstickers, Kung Pao Chicken and more. Since going gluten-free my take-out orders at my local Chinese restaurant have been bland. At best.
“Steamed Chicken and Veggies, please”, I say with a forced fake smile while ordering my Chinese take-out each week… or should I say Chinese fake-out each week. Come on… really? Who am I kidding? I really, really miss good Chinese and other Asian dishes with all of the flavorful sauces and ingredients that add a burst of flavor and element of surprise.
This is why my fake smile was replaced with a real-life, honest-to-goodness, ear-to-ear smile when I received an advanced copy of the new cookbook, “The Gluten-Free Asian Kitchen – Recipes for Noodles, Dumplings, Sauces, & More” by Laura B. Russell. Talk about good fortune!
This cookbook is a keeper. As soon as I received it I immediately started reading each and every page oohhing and aahhing over each recipe and every scrumptious photograph. By the time I was at the last recipe – I had tabbed over 2 dozen recipes to make myself.
It’s no ancient Chinese secret that Chinese food, as well as Japanese, Korean, Thai and Vietnamese can be jammed packed with gluten and dairy containing ingredients. However, Laura B. Russell does an excellent job of demystifying the most common ingredients used in Asian cooking, as well as supplying tips and tricks to navigate the grocery store; helping find replacements for gluten and dairy ingredients; and ultimately assisting celiacs and dairy-free folks the chance to enjoy Asian cuisine once again.
All these delicious reasons and recipes are why I am thrilled that this week’s WIN-It-Wednesday on BeFreeForMe.com is sponsored by Laura B. Russell – the author of “The Gluten-Free Asian Kitchen – Recipes for Noodles, Dumplings, Sauces, & More”.

I miss egg rolls the most, but potstickers are a very close second!
August 10th, 2011 at 12:54 am
Postickers! Potstickers! Potstickers! My husband (who can eat gluten) was craving them so much that he bought them and ate them in secret so that I wouldn’t feel sad. It didn’t work. This book would be awesome so that I could make some that both of us can eat!
August 10th, 2011 at 1:00 am

August 10th, 2011 at 2:26 pm
Egg rolls and potstickers are the two main Asian dishes I miss. With an Asian son-in-law and Eurasian grandchildren, I’m always being challenged to stay gluten free.
August 10th, 2011 at 2:51 pm
Lets see, I would have to say EVERYTHING!! I love the noodles, I love egg rolls, dumplings, and Orange chicken, but I have found that Asian cuisine is the best choice being gluten free, they have many options that do not contain gluten.

I have made the General Tso’s chicken recipe that I got on your great website and it is delicious but so much more work than picking up the phone and ordering take out!!! I do have to say that PF Changs gf menu is very good but not the same as the take-out joint close to home (and not as cheap either!).
Thanks for this weeks great give-away!
August 11th, 2011 at 9:38 am
The one goodness I never can have when out eating Asian food is the sweet ending of fortune cookies. I love them but now I only get the fortune and miss out on the joy of the cookie. It is just not the same.

The thing I miss the most is crab Rangoon and egg rolls.
August 12th, 2011 at 10:20 am
I can see everyone has missed Asian food as much as I did before writing this book! The Gluten-Free Asian Kitchen does include recipes for spring rolls, potstickers, fried rice, Chinese bbq pork, and a sushi rice bowl (seems like many of you were missing these things). You’ve all given me great ideas to work on more Asian recipes–thanks!! I will tell you I meant to include a General Tso’s recipe in the book, but it was incredibly time consuming (you have to deep fry chicken, clean out the pan, and THEN make a stir-fry with it!) I figured if it was too much trouble for me then you probably wouldn’t want to do it either 🙂
August 12th, 2011 at 10:49 am
Basically,I miss it all! to be specific: I miss crab raggon, spring rolls, won ton soup sweet & sour pork, etc.

August 15th, 2011 at 7:56 am
Not a specific dish, but we really miss going out for Dim Sum! Living across the border from Windsor, Canada, where there are many Dim Sum restaurants, and not being able to go anymore is a bummer!

August 15th, 2011 at 1:43 pm
I really miss Asian food. My extended family and myself would go out for meals at a local Asian food restaurant. It was how we would celebrate a family gathering every year. My sister and I both have Celiac disease so it has been 3 years for both of us without yummy Asian cuisine.
August 15th, 2011 at 5:02 pm
Crab cheese wontons, then eggrolls.
August 16th, 2011 at 12:35 am

August 16th, 2011 at 8:53 am
I miss alot of it, but egg rolls, chicken fried rice, & pot stickers come to mind.
I not only have intolerances to gluten & dairy, but soy also, so I have to make my own soy sauce, too!
This cookbook would be a Godsend to have.
August 16th, 2011 at 9:44 am

August 17th, 2011 at 10:13 am
I miss going to the buffet and getting EVERYTHING! But the thing I miss most of all is probably a dish I used to get in Key West years ago called Cellophane Noodles. It had clear noodles, lots of mushrooms and veggies cooked in a wonderful sauce. It would probably be easy to make gluten free, but I don’t have a clue.
August 17th, 2011 at 10:48 am
My daughter misses dumplings and egg rolls! I would love to be able to make them for her.
August 17th, 2011 at 10:54 am

August 17th, 2011 at 12:54 pm
I miss just being able to go in and order without worrying about ‘what’s in it’. I’ve have a few places that use soy without the wheat which makes it easier. But egg foo yung and udon noodles would be nice.

Ahh! I need this book! My kids and I just got back from Singapore and they loved all the food they were allowed to sample that was GF. (Especially Chicken Rice- happily without soy sauce it is GF). What they love, but miss and could not have are spring rolls. Oh, there are so many other things they would have loved to tried have try as well. With this book I can create those dishes and they can taste what they missed.
August 19th, 2011 at 12:24 pm
Asian, whether it be Japanese or Chinese, I do so miss many of the dishes. I am really looking forward to this cookbook. Sigh to taste it again…..yum…..drool.
August 19th, 2011 at 2:24 pm
Old fashioned pork buns with the sweet fluffy white bread! And I miss Singapore Noodles which I had to order without onions for my guy who is allergic to cooked onion, but even without the onion it was still good.
August 19th, 2011 at 2:31 pm
I miss reading my fortune from that tasty, gluten-made fortune cookie!
I may be missing out on a lot of sage advice for future endeavours!
And I miss that good comfort food of a delicious wonton soup… to warm up my taste buds for Asian cuisine.
At least I’ve been able to substitute egg rolls & spring rolls, with a rice wrap roll, filled with fresh veggies.
August 19th, 2011 at 4:11 pm
Oh for egg rolls and dumplings! If I don’t win this book, I have to buy it.
August 20th, 2011 at 3:23 pm
Since time of diagnosis in 1980, I have found the most choices compatible with a gluten-free diet in Asian restaurants (where rice and vegetables tend to be mainstays). But as to re-doing traditional Asian recipes which normally contain gluten — I haven’t had the time for or conditions conducive to extensive experimentation. Now it seems, someone has already done the work, and is generously sharing her kitchen-tested recipes!
August 20th, 2011 at 10:07 pm
I miss egg rolls. I remember them from my youth.
August 22nd, 2011 at 12:43 am
My daughter misses soy sauce and egg rolls…I would LOVE your cookbook, looks wonderful!!

August 23rd, 2011 at 11:27 am
I really miss Crab Ranqoon and Egg Rolls. Beginning with an appetizer is always a great social starter. Most people who dine with me feel awkward that they are eating before me and try to make me feel better that my food will soon be coming. Appetizers ! ! ! !
August 23rd, 2011 at 1:12 pm
The one thing I miss most of all in Asian cuisine is definitely soy sauce……on anything from steamed or fried rice to Kung Pao chicken or pot stickers.
August 24th, 2011 at 4:43 pm
I have to honestly say that I miss fortune cookies the most. As a child we would often go out or order take-out Chinese with my grandparents. We always shared our fortunes with each other. Aside from that I miss other things cooked with soy sauce.
April 16th, 2012 at 12:54 pm
