This prize could not come at a better time! I am so bored of eating raw mushrooms and peppers for breakie every day! This would be so wonderful to learn new ways of mixing my veggies Being VEGAN does not have to be boring……right?

I sprinkle ground flax seed on just about everything. It makes a great yogurt and veggie topping, as well as a nice low carb substitute for many crusts. (I am told my apple pie and cheesecake crusts are pretty amazing.) For me this is a great way to lower carbs while getting healthy omega fats and fiber.

We have made so many healthy changes since our daughter’s diagnosis of Celiac Disease, from how we eat to being more physically active. One huge change is not eating out, even at “gluten friendly” restaurants as our daughter still seems to have issues. While we are healthier and happier in general, it puts more pressure on being creative and inventive in my home kitchen to keep our meals from getting boring. I would love the opportunity to learn new recipes!

I subscribe to her blog and one of the things I like is that while she has some good smoothie recipes, she uses her blender to make a wide variety of other things. This would be a great cook book.

I am not “super healthy” at all, but I try to get healthier by drinking a glass of water before each meal and two at bedtime. I also go for a walk every morning( even if it is a short one because of time limits). I try to eat veggies and limit junkfood. It’s easier said than done but every little bit is a step in the right direction.

Nothing like starting your day with a great fruit smoothy.
June 5th, 2014 at 8:48 am
I try to keep our diet full of whole, natural foods. I cook from scratch and try to include as many fresh fruits and vegetables as I can. I was doing this before going gluten free, but it certainly makes living the gluten free life easier and healthier.

I make my own sauerkraut and eat a few tablespoons everyday. The natural probiotics are better than those in pill form.

One thing I do is the old tired and true an apple a day in my lunch box. Some might say this could get boring however with the large varieties of apples at farmer’s markets and whole foods the possibilities are endless.

I’ve been following the blender girl blog for several months now and lusting after the book! One thing I do with consistency is add blueberries to all least one meal or snack daily. Frozen in smoothies, fresh in oatmeal and even tossed into salads or marinades.

To keep myself super healthy I’ve started to eliminate toxic people from my life. Or at the very limit my interaction with them. The stress from these types of people has been destructive to my health in the past. Now I’m more grounded, healthier mentally and physically.

I run oats through the blender and use in recipes that call for breadcrumbs. I also add flax seeds to smoothies for a little added texture and nutrition. They taste like graham cracker crumbs!
June 13th, 2014 at 10:27 am
When I plan my meals I first think of what vegetable I’m going to eat and then plan around that. It forces me to fill my plate first with the healthy stuff and then add on the not so healthy stuff as an after thought!

My grandson, who lives with me, has celiac and it’s a challenge getting him to eat the foods that are best for him. I especially worry about him getting enough protein. I’ve had a yogurt maker in the cupboard for two years and totally forgot about it until cleaning my kitchen yesterday. Making yogurt is so easy and I can use organic milk and plain yogurt for a starter. I had made gluten free strawberry shortcake last night and figured the left over fruit would make a great topping for the yogurt. I used agave for sweetener and added some macerated and fresh strawberries to mix into the plain yogurt. It tastes so incredibly fresh that I eat it plain, which stores in the fridge for up to 2 weeks. I love Chobani also but you won’t believe the different in taste. I turned it on at night and it was ready when I got up in the morning.
