Gluten-Free Grilled Bacon Wrapped Blackened Pepper Poppers

Sometimes you like things hot. Really hot. But this weekend I quickly discovered that my garden’s peppers are, yes indeed, an example of something that is just way, way too hot.

So what is a girl to do with a garden-full of way, way too hot peppers?

And then suddenly a super-cool idea popped into my mind. Grilled Bacon Wrapped Blackened Pepper Poppers.

The saltiness of the smoked bacon, the creamy smoothness of the cream cheese and the blackened grilled peppers are sure bets to offset the spicy capsaicin, the stuff that makes peppers wicked hot.

The key to reducing the spiciness of the peppers in this recipe is the removal of the ribs, membranes and seeds in the peppers. This is a sure way to reduce, but not eliminate some of the heat. Also the casein in the cream cheese helps ease the burn, while the fat, mixed with the oils from the peppers helps neutralize the heat. I also think that blackening the pepper skins helps lower the Richter Scale of hotness.

Oh… and a word of caution – please (pretty please?) make sure that you wear plastic disposable gloves when preparing this recipe. Hot peppers are serious stuff.

Grilled Bacon Wrapped Blackened Pepper Poppers

Ingredients:
5-6 medium sized hot peppers, (such as Italian, serrano or similar)

About 2 tablespoons olive oil

One 8-ounce package of cream cheese – softened

10-12 slices of smoked bacon

1-2 pairs of plastic disposable gloves (important when handling peppers!)

Directions:
Wearing a pair of disposable plastic gloves, slice each pepper lengthwise, leaving the stems intact.

Using a paring knife, a small fork and your fingers, carefully remove all seeds, ribs and membranes from inside the pepper (basically all of the white stuff inside the peppers). Brush the sides and inside of the pepper with olive oil.

Preheat a gas grill to medium heat, and place the peppers onto the grill, turning occasionally until slightly blackened. (Note: you could also use a broiler to do this too).

Remove the peppers from the grill and carefully stuff the peppers with the cream cheese. Wrap each stuffed pepper with one to two slices of bacon, and place back on grill and cook, carefully turning occasionally, until the bacon is slightly crispy and cooked through.

Serve immediately.

Serves 3-6 as an appetizer.

Friday Favorite: McCain’s Purely Potatoes

This week’s Friday Favorite is all about convenience. With the kids back at school, more formal meal times being planned and the car pooling kicking back into high gear – it is always good to discover products that can make our lives simpler… and tastier!

McCain’s Purely Potatoes makes meal time sides a snap. They come in three varieties that are all gluten-free and allergen-free: Whole Baby Skin-On Potatoes (made with just one ingredient – you guessed it:  Potatoes!), Russet Potato Slices and Shredded Hash Browns (both with some added Citric Acid to maintain natural color).

My favorites are the Shredded Hash Browns since there are so many ways that you can use them. You can make them into Potato Pancakes, Potato Casserole or just plain ole’ delicious hash browns for breakfast time.

The McCain’s website also has tons of recipes that use the Purely Potatoes – it’s worth checking out. A couple of the recipes I can’t wait to try are the Purely Potato Sausage and Cheese Frittata and the Purely Potatoes Pesto Potato Salad.

Ask Shelley Case: Tomato Tips & Gluten-Free Recipe Ideas

Question:
My garden has an abundance of tomatoes – can you give me some tips on using them, as well as some gluten-free recipe ideas?

Answer:
Any way you slice them, tomatoes are a nutrition powerhouse that are so versatile in a gluten free diet. They are low in calories, rich in vitamins and minerals like potassium, vitamin A and C, as well as lycopene, an antioxidant that gives tomatoes their red color. Lycopene has been shown to play a role in lowering the risk of some cancers, particularly prostate cancer.

Another added bonus – tomatoes are delicious! Let’s face it… you can’t beat the taste of a local fresh-picked tomato! Although you have an abundance of tomatoes now, come winter you’ll be missing these juicy gems, when you can’t find a good tomato anywhere.

Here are a few tips, tricks and recipes to enjoy tomatoes now and in the months to come:

~ Start with selection: Select tomatoes that are heavy for their size, brightly colored, slightly firm and blemish free. If tomatoes are not ripe enough, place them in a paper bag and allow them to ripen at room temperature.

~ Storage: Refrigerating tomatoes stops the ripening process and kills the flavor, aroma and texture (this is why tomatoes turn mealy). Store them at room temperature instead. However, if they are very ripe they can be stored in the refrigerator.

~ Serrate them: The best way to cut tomatoes? Gently with a serrated knife to avoid crushing.

Tomato Types and Uses:
There are so many types of tomatoes it is often difficult to determine what type should be used for which purpose. Use this handy chart below to decide what tomato is best for your use or gluten-free recipe.

Think beyond the summer: Although the peak growing season for tomatoes is June through October there are ways to enjoy fresh tomatoes year-round. Here are some methods to preserving your just-picked tomatoes:

~ Canning: Canning has become very popular once again over the past several years. Check out the canning tomato tips from Canadian Living Magazine.

~ Freezing: Freezing tomatoes is a simple way to enjoy tomatoes off-season for casseroles, soups and chili.  Start by thoroughly washing the tomatoes, and dipping them in boiling water for about 30-45 seconds to loosen the skins. Remove from the water – peel and remove the core. Cut into pieces or leave whole and pack into freezer bags. Remove excess air and seal tight. Remember, when thawed the tomatoes will be slightly mushy so they are best used in casseroles and soups.

~ Cook recipes and freeze to enjoy later:
Salsas and sauces freeze up nicely and are the perfect quick and easy start to hectic weekday dinners. Whip up a quick batch of Fresh Pomodoro (Tomato) Sauce today and enjoy over gluten-free pasta once school starts!

Friday Favorite: Ocean Spray Craisins

I love cranberries. Growing up in Southeastern Massachusetts we had cranberry bogs everywhere. Cranberries are a staple in my diet. Always have been and always will.

Maybe that’s why Craisins are a must in my gluten-free diet. Made by Ocean Spray these real fruit berries are the sweetest way ever to eat a cranberry.

I like to top my salads with Craisins, sprinkle them on baked chicken breasts stuffed with goat cheese, or add a handful into Gluten-Free Oatmeal Cookies. The ideas are endless.

Friday Favorite: The Spice Hunter Seasonings

We’re really going to spice things up a bit for this week’s Friday Favorite. Being grilling season and all, I love to shake up my ho-hum grilling every once in awhile and season up my chicken, meat and veggie’s with a little spicy love.
