I’m thankful for my loving family who has supported me and helped me with my Celiac Disease! And the lovely gluten free, allergen free, nutrient packed, sweet potato with cinnamon and coconut oil. One of my FAVORITE treats. 🙂

I’m am a newbie in the GF world! And I am so very thankful to good friends who took into consideration my new changes in lifestyle, and during our potluck dinner, made sure it was gluten free (I baked GF chocolate cupcakes; first time doing so and turned out great!).
I’m needing to learn so much more about GF living, and found Be Free For Me whilst searching.

I am having my first gluten free Thanksgiving this year! I’m thankful to have finally (very recently) realized the cause of some of my health issues, and I’m happy that some relatives will be coming in to town for the holiday.

Oh, there is so much to be thankful for this year as ever. I am thankful this year that my son has stayed healthy and that most of my attempts at GF cooking/baking have turned out rather than be thrown out. Yeah! Happy Thanksgiving everyone!

I am thankful that my adult children will go out of their way to try to accomodate my need to be gluten free. This will be my first holiday season since being diagnosed with celiac, so I’m sure it’s going to be challenging to attend parties with a lot of food I can’t eat.

I am thankful for my family. I am very thankful this year because this is the first year I am not in pain. I’ve been in pain for 8 years and this year I found out what was wrong — gluten intolerance. I am thankful to my family for not being scared to eat gluten free dinners every night now and they actually love some of the dishes more than the other things I used to cook with gluten in them. I am thankful that my brother had the guts to go to a doctor and got diagnosed with celiac disease which pointed me finally in the right direction for my diagnosis. I am thankful to my doctor for not giving up on me and for not telling me I’m crazy or that it is normal to be in this pain as so many doctors have over the past 8 years and for second guessing his diagnosis of IBS when the meds didn’t work. I am now living and enjoying a normal life and for that I am thankful for most of all!

I am thankful my son was finally diagnosed with celiac and that we are not playing a guessing game with his health any more. I now have the resources to make him healthy again and have learned to cook alot of interesting foods. I am looking forward to tackling Thanksgiving dinner but a little nervous about it as well.Happy Thanksgiving to everyone!!!!!!

After 2 years of my daughter being listed as failure to thrive, I’m thankful that we finally got a diagnosis of Celiac’s disease and that she’s finally above the 1st percentile in weight for her age

I am thankful for the many recipes and gluten free products available today. I can enjoy foods like stuffing and cake and pie and bread and still be gluten free. (Sometimes my friends do not know they are eating gluten free at my house).

I am thankful that we tried gluten free with my son (tests were inconclusive). He went from barely 8th percentile to 65th percentile for weight in less than 9 months, began sleeping better, trusts us when we offer new foods and is generally a normal 3 year old. We started Gluten Free just before Thanksgiving last year and we are enjoying the anniversary of his improved health.

I am thankful for a husband who is so supportive that he will cook 2 seperate meals if that is what is needed and because I am highly sensitive to cross contamination and newly diagnosed he is extremly careful and protective when we go anywhere! I am also thankful for the friends who allow me to try out the GF recipes on them and family and friends who are more than supportive in all of this as I adjust to the GF diet!

I am thankful for having so many people in my life who love me and try to accomodate my GF lifestyle. My husband, his entire family, my family and my 2 beautiful sons are always looking out for me and my restirctions. My brother-in-law made me my first GF bread crumbs (excellent BTW!). My sister -in-law makes Thanksgiving and Christmas dinner GF (and no one knows the difference!). My sister now makes the familiy’s favorite vermicelli salad GF. My mother makes my favorite date nut bread GF as well. Everybody does what they can to make my life easier and more enjoyable and I am thankful for all of them and everything they do.

This is my 1st Thanksgiving being gluten free. Actually I was just diagnosed in September. Through this journey, I am thankful for my mom being very supported and trying to find the ususals in gluten free for me to enjoy. Also, I am thankful for all the “proud of you” I get, when I tell them I have not cheated once. I cant wait to see how my family enjoys the gluten free dishes too! I am just thankful that my doctor finally found out what was wrong:)

I am thankful for gluten free, soy free, egg free, and dairy free bread with low sugar content. Even though its not an exact substitute for the real thing, as I diabetic celiac with egg, soy and dairy allergies, it fills the need that i have for bread.

I’m thankful for the fact that going gluten free has improved my overall heath and nutrition. Of all of the triumphs I had to overcome at a young age ( diabetic at 12, 2 heart attacks by 18), I’m most appreciative of this new, yet again, way of eating and living. I now live on a diabetic (low sugar and glycemic foods), heart healthy (low sodium, low fat), and gluten ( and dairy and peanut free) diet and I feel the best I’ve felt in many years. Going GF has helped lower my blood sugar levels which in turn is doing wonders for my health.

I’m thankful for finally feeling well again! For months I was fatigued beyond belief! I was diagnosed with gluten and casein sensitives and have a self-diagnosed soy intolerance. I no have to stop myself some days to appreciate that I have the energy to walk across my campus and the brain power and focus to do well in my classes. It was incredibly frustrating knowing I had a test the next morning and not being able to study because I couldn’t comprehend my notes.
I’m thankful to catch this and treat it, thankful my grades are coming back up and thankful that I have enough energy to run and exercise again! My roommates are incredible too and I’m thankful for them and their support.
Oh my gosh, I can’t forget to show my love for FRUIT being on my able-to-eat list too!

I am thankful that my new in-laws are so willing to work with me and try new things this Thanksgiving. It is my first Thanksgiving away from my parents and my in-laws are letting me bring some changes to their traditional meal. I am also thankful that my parents were such wonderful cooks who taught me well, so I don’t think the changes are going to be as drastic as some of my new family are thinking.

It has been a little difficult being the only GF/WF person in my family, but, they have been so supportive! My husband buys my GF pretzels and my son and daughter-in-love always think of me when they prepare holiday feasts. And life is so much better health wise!

I am thankful for finally feeling better!!!!! I’m healthy. I am especially grateful that I don’t have to take medicine to manage my disease. All I have to do is eat differently. It took me a looong time to feel this way. At first eating was so frustrating. But it is getting easier and I can see the benefits of it. I don’t feel tired or sad. My skin looks better and my stomach doesn’t constantly hurt. I am blessed.

I am a newbie to being gluten free. My five year old daughter was having so many of the “classic” symptoms of celiac, so we decided to try going gluten free. This Thanksgiving, I am so very thankful for all the amazing people who have been able to help us with this transition. All of my questions have been aswered and so many people have been encouraging. I am also thankful for my family who supports this decision to try the GF diet for my daughter, and for all of them to participate in it as well to support her! We have been gluten free for only about a week now, but I must say, her tummy problems are so much better!!

I am thankful that more and more GF products are becoming available for all of us. Nothing wrong with fruit, vegetables, meat and etc.. but it’s nice to indulge in a baked item every once in awhile! Believe it or not I am thankful for celiac disease! When I look at all the changes that I have made in my life due to this disease, I realize I have met many new people, I spend more time with my oldest son (also diagnosed). We attend a Meetup group that I organize now. We find new things to do and places to eat. It can enlighten you to who is your dearest friends (those that will still invite you and really care to learn what you are going through) and show you how much love is in your life to be thankful for! It forces you to slow down a little and really see your life. I hope everyone can see how blessed we are. REmember … It’s only food!

I am thankful that my daughter and myself were finally diagnosed with Celiac Disease and that we are finally feeling healthy and happy again! I am thankful for CSA and their conferences that have helped me tremendously regarding education of the disease. I am thankful that I have spent years learning about the disease and now run a Support Group Chapter for the Southern Tier of NY. Lastly I am so thankful that my family has supported my daughter and me with this disease and have been there for us every step of the way!

Oh my gosh, thank you. I am thankful that this year they FINALLY figured out what was wrong my body. I was prodded, vampired, and asked all sorts of questions with the conclusion that there was nothing wrong. Yet, I was nauseous, headachey, with sore joints. And it came and went.
Now that I am learning where to find and avoid Gluten me life is SOOOOOOO much better. I am very Thankful.

I am grateful that I was diagnosed when I was (in my 50’s). If not for my diagnosis, my children and grandson would probably not have been diagnosed, not until they had suffered permanent problems as I have.
I am also thankful for the support groups. Sharing new information and product information and recipes is a great help to staying gluten free.
I am also thankful for the many books that have been written about the disease and the diet. I keep a list of all those I have read (a pretty long list) on our web site to encourage more celiacs to do the same.

I am thankful that I was diagnosed early enough in my life to prevent any further damage and the advancements made in this disease. Unlike previous family members who have died of stomach/intestinal cancer and didn’t get the chance to know what it was they actually had. This disease wasn’t known at that time, so they couldn’t be cured.
I am also thankful for my family’s continuous love and support as I make the transition to a gluten free lifestyle.

I am thankful for a husband (who was just diagnosed with Celiac) who has been a wonderful patient during all his time in the hospital and who I know will be willing to try new GF foods and see the positive side of the changes. I am thankful for good health. I am also thankful for Trader Joe’s and Whole Foods for carrying Gluten Free products. Other than being Celiac I am also Lactose Intolerant. So I have to be double careful what I eat and where I eat. Since beginning of 2008 I lost almost 20 pounds, stayed in great shape, feel better and learned how to cook Gluten free meals at home. Cooking at home saved me from the pain after eating outside and of course saving money too buy staying at home and cook.

I was diagnosed with Celiac 18 days ago – I am thankful that I was referred to a gastroenterologist that was familiar enough to notice my symptoms and actually do a biopsy to determine my diagnosis. I have been gluten free for 15 days and I am starting to feel so much better and I am extremely thankful for that !!

I am so thankful for a family who bent over backwards to learn how to cook gluten-free and help me learn how to cook gluten-free, since they knew I was not a cook to start off with! They are solely responsibly for helping me get healthy after I was diagnosed. I am thankful that my daughter is happy and healthy since going on the gluten free diet. It’s been two years since her diagnosis and she has just blossomed. I am thankful for the support of family and friends. I am thankful in a way that having been diagnosed with Celiac has opened up a whole new way of eating and cooking for me. Before being diagnosed, I had never heard of Amaranth, Quinoa, Teff, etc. Since I cannot eat many ready made, prepackaged items I am now eating less chemicals! Because I need to eat healthy, my entire family has benefitted and is eating healthy as well. I was never a baker, and now I bake all the time. So, though being diagnosed with an auto-immune disease wouldn’t have been top on my list, having been so and strictly adhering to a healthy gluten free diet has ultimately been beneficial to my overall health. So I am thankful.

After 4 months of doubling-over pains and rushes to the hospitals for emergency tests, I am thankful for learning I am a celiac.
I have been living gluten-free for a week now.
Granted, with 2 children I need to learn more cooking skills but I adore how everyone in the community (online and in-person) have been so supportive and most importantly: friendly.

Am thankful for my husband who likes to surprise me with gluten-free dishes to enjoy, for friends who go out of their way to assure I have something yummy, and for my grown kids who are ever on the lookout for new products at the store or cheaper prices, and better at checking labels now than I. Am also thankful for my {since deceased} mother-in-law who early on struggled to adapt recipes so I could have family favorites.. like Pierogies! And to supermarkets and food companies who are now serving the GF community with more widely available products – and to those who brought the GF information to the forefront to make it known. I am thankful that I had my husband, Michael. He threw himself into trying to understand my health problems. He refused to eat things that I couldn’t eat even though I told him it was okay. He read the articles and the books, came with me to the doc’s office and helped me make sense of it all. When we visited his Mom in another state, he wouldn’t rest until he found a restaurant where I could eat a GF breakfast. I miss him more than I can say.

I am thankful for my family. I am so glad that everyone is so supportive and anxious to try new gluten free foods and recipes with me. Sharing my new discoveries with my friends and family makes it easier. I have noticed that when I make something new, everyone wants to try it and loves it. I am so thankful that my daughter is healthy and enjoys eating again. I am thankful we are all on this journey together.

I am thankful that I was finally diagnosed. I am thankful for the amount of knowledge I have gained about my celiac lifestyle and about allergies and food in general. I am thankful that people are starting to realize the importance of food allergies, and of eating better. I am glad there are a lot more resources out there, including BeFreeForMe.com, that make living with allergies that much easier.

I’m so thankful for learning I’m a celiac and going gluten free. My health has never been better and I eat healthier all around.

I’m so thankful to have my husband still with me even though he suffered a bad heart attack and found out that he had diabetes and sleep apnea. Every day with him is a gift! I am also very grateful to have found out that I have celiac sprue and can change my diet and that it was nothing serious.
