WIN-It-Wednesday: Gluten-Free Cupcakes Cookbook by Elana Amsterdam
It seems that everywhere you turn you hear about cupcakes. Cupcakes, cupcakes, everywhere! The Food Network featured a show called “The Cupcakes Wars”; cupcake boutique bakery shops are popping up everywhere, and one of my favorite wines graces the Cupcake name and image of these little lovely cakes.
And this recent cupcake craze is o.k. with me. I have always loved cupcakes. Cupcakes are happy little cakes. I’ll take a cupcake over a slice any day. Fun, compact, and made to eat with your fingers (have you tried to eat a slice of cake with just your hands?) the cupcake is all about individuality. No slicing, no fighting over who will get the frosting flowers, no objecting that the pieces is “too big” or “too small”.
Cupcakes in the world make everything good.
I remember when I was a little girl my Mom would make a rainy afternoon fun by letting me and my sister’s decorate our own custom-made cupcakes.
Each cupcake a tiny, sweet personalized cake of perfection.
And now… thanks to Elana Amsterdam (fondly and famously known as @elanaspantry on twitter and Elana’s Pantry on Facebook) cupcakes are once again a personalized & perfect treat for those living the gluten-free life! It’s all good once again.

When I was a little girl my mom always made me cupcakes for my birthday because I did not like cake. Interesting, right! She made the most delicious cupcakes ever!!! I miss them terribly now that I am G-free. But see does make a mean banana bread!

Maybe my NOT so favorite cupcake memory… first try at making GF cupcakes. Dry, crumbly, almost inedible, found much better success as I have learned from the many WONDERFUL people in the GF community and their recipe blogs! I am to thankful for all those who have gone before!

Hmmmm… EVERY cupcake memory is a favorite for me! 😀 if I HAVE to narrow it down, I guess I would say that the devilsfood cupcakes that I made and sold for Relay For Life last year (real ones, not GF) is my favorite memory. They helped raise money and awareness for cancer. 😀 My sister was saved from lymphoma two years ago and I am so grateful – and my cupcakes helped me give back 😀

I’ve always been comfortable creating fun desserts for everyone. Untill I needed to “convert” my baking to gluten free. Nothing, I mean nothing would turn out as easy and delicious when I started baking gluten free. My husband would say you’ve tried your best. It tastes good (When I was well aware that it DID NOT!) Then one afternoon my Husband brought a bakery box into our house and said this is for you. I asked did you forget I can’t have anything from the bakery anymore. He said Oh Yes you can! My Wonderful husband bought me a dozen of gluten free cupcakes. They were delicious! However, I didnot bake them myself. I am still determined to bake good tasting cupcakes!

For Mother’s Day I made a lemon cupcake w/a lemon cream frosting. It was such a hit I could not keep my husband or son out of them the night before!! Then Mother’s Day my dad must have eaten 4 and was still asking for more. I’d say that was a successful receipe!!

My favorite cupcake memory is when our daughter who is GF went to school and the school lunch program makes cupcakes for the kids birthdays each month. They take one day a month and make the birthday kids for that month a cupcake. I remember my daughter missing out on that the first time (becuz I wasn’t aware they did this tradition), and then the next year I had made her a GF cupcake, and the smile on her face meant the world.

A favorite cupcake memory is my Mom letting my siblings and I make faces on top using all kinds of candies when we were kids. I keep it much simpler with my own kids using just sprinkles, but I should let them get creative next time!

I am cupcake deprived! Cupcakes were not made when I was growing up! …Or made for my children either! So they are not a tradition in our family. But cupcakes make a lot of sense now that I am gluten intolerant; they hold together easier. Family traditions are changing!

When I was a kid we made these cupcakes from a mix. They had pudding that you could plop in the middle, and when they were baked, they had a gooey pudding surprise in the middle.

My daughter tries to make sure that any event that I attend is gluten free so when it came time to plan my grandson’s first birthday party I was in charge of the cake. Since a gluten free cake is a little expensive for a baby to smash, I decided to make cupcakes. My stepdaughters and I made 2 dozen choc/vanilla marbled cupcakes, arranged them and frosted them to look like Winnie the Pooh. What a hit. The baby had his own to do with what he wanted without wasting a bunch of cake and serving for everyone else was a breeze.

My favorite cupcake memory was my last birthday at home before I got married. I told my Mom all I wanted was cupcakes for my birthday, no gifts, just cupcakes. For some reason she hated making them and she kept telling me she was not going to make me any. When I got home from work I could smell she baked something but there were no cupcakes in the kitchen. When I went to my room to change, I was shocked, surprised and happy to see a tray of beautifully decorated homemade cupcakes with a note from my Mom on my bed!
Sadly, this was my last birthday with her before she passed away, but by far my absolute favorite cupcake memory!!

My favorite cupcake memory of late, would be this past Sunday, Mother’s Day. The family and I went on a 3 mile hike. We were hot and covered in dust. When we arrived back to the car, my husband had a vanilla frosted cupcake for each of us. It was the perfect treat after our family adventure! I savored every bite!

Hmmmmm, probably my best cupcake memory from years ago is a good Devil’s Food cupcake with a cream cheese frosting, that I don’t have to share, they really are the perfect finger food. Today I’d have a tough time deciding between my coconut fruit pudding cupcakes with fruit based icing, or real red velvet with a mascarpone based frosting. 🙂 no food coloring in my red velvet!

I WANT THIS BOOK SOOOO BAD!!!! I gasped when I saw what the “Win It Wednesday” prize was. My co-workers turned around and wanted to know what all the fuss was about. LOL!!!
Anyways….My favorite cupcake memory is from my kindergarten Halloween party. All the moms brought decorated cupcakes. Some looked like bats. Some has spider rings in them. I just thought it was the coolest thing.

Every Tuesday morning in college the bakery I got coffee at would have new flavors of cupcakes baked fresh, so I would try one. One morning I got to my regular table and there was a single cupcake with a note from my future fiancee asking me to have coffee. Best cupcake I’ve ever had!

I have always had a sweet tooth, and my mom loved to bake. Lucky for me and my sister she would store her lovely creations in the freezer so that there always where treats handy. but they often went missing, we would sneak to the freezer and help ourselves.

My most favorite cupcake memory as a child was getting clown cupcakes from the bakery in Westland Plaza in Jackson, MS. Just to get to go in that bakery and experience the smell was enough for me! As a small child I remember all the beautiful cakes and colorful decorations. I did not have the greatest childhood but that is definetely one memory I do cherish!

My favorite cupcake memory is from my son’s first birthday party. I was inspired to make “healthy” cupcakes and to offer a selection – what was I thinking? Anyway, I made 3 varieties, decorated them differently, stacked them up for display and was quite pleased with my work until I tasted the chocolate peanut butter variety. Very dry and crumbly. So much for a web recipe. Now I enjoy trying out different recipes with my son acting as my helper. No matter how they turn out, we always have fun and enjoy the process. It would be wonderful to have a book filled with tested recipes (i.e. delicious) to choose from.

I think my favorite cupcake memory was recently… Helping a friend salvage the frosting on her cupcakes for her daughter’s 6th birthday cake, and then helping a whole heap of 5 and 6 year olds frost more cupcakes! So many smiles!

We just had our GIG food fair and I saw at least 4 of these cookbooks in our raffle, you know I put 2 tickets in each of these and didn’t win it. I have so many good things about this book……yummy things. The chocolate coconut flourless cupcakes sound divine!

My favorite cupcake memory was making them in elementary school in my home economics class. We made them to sell as fundraisers for our class trip. Mine were lemon with lemon icing. I was so proud of those lil’ lopsided, sweet cupcakes of joy! LOL! It was so much fun.

Just recently diagnosed and checking out all the resources to change my baking habits! I love to bake and quite good at the wheat kind, but the GF kind has not been as successful. The hardest part about being diagnosed with celiac is making my favorite recipes turn out with the adjustments. Smore cupcakes are my favorites, I love how the marshmallow’s carmelize. My daughter who has celiac too loves chocolate cupcakes with dark chocolate frosting. My son who has no allergy prefers a simple white cake that’s not heavy and wrinkles his nose at anything claiming to be GF. So we’re trying to change his thinking about GF recipes. My husband eats anything. Thanks for the advice, I look forward to learning more all the time!

I love all cupcakes! I love to make my homemade recipe for chocolate cupcakes with marshmallow frosting. They are soft and moist. They are a family favorite that I have been able to easily make gluten-free. I love the chocolate smeared smiles my kids give me when they say “Thanks, mom…these are the best cupcakes ever”!

My fav is white chocolate with white chocolate frosting. My favorite memory would be the cupcakes served to us after completing a carpentry ministry to build a set of stairs for a sweet older lady. She was so excited to give us something for our hard work. We were so excited to bite into the rich chocolate cake with buttercream frosting.

I wish I could say I had a favorite G-free cupcaake memory. Truth is we just started this diet for my oldest son. We are going through the “taste testing” process. So far not so good, but i will not give up. It has already mad such a difference in him already! I just wish I could find a decent desert for him. He eats all his dinner, then asks fo desert. Everything in the stores that are gluten free like cookies, etc.. he doesn’t like. I am learning though, slowly but surely. His favorite is my favorite Red velvet with cream cheese filling and frosting!

I enjoy trying out recipes for gluten- free things that I have not been able to enjoy other-wise. I would love the opportunity to try different types of cupcakes for family and friends, some of whom think gluten-free food has no taste.

My best cupcake recipe is when my best friend (who has Celiac’s disease) gave me her recipe for gluten-free cupcakes to make for my son (who had multiple food allergies, including wheat). I have been baking for him ever since!

My favorite gluten free cupcake is from Sweet Cheeks Bakery in Kirkland, WA– their Salted Caramel version is to die for! I had them make it into a wedding cake for me and then we served our guests it in individual cupcakes. Seriously the bomb-diggety!

When my fiance and I first started dating pre-celiac diagnosis we found this incredible privately owned bakery that had every flavour of cupcake imaginable. The best was the vanilla cupcake with the creamsicle buttercream frosting, it was honestly the most heavenly thing I had ever stumbled upon. He and I both almost went into diabetic comas but it was *so* worth it. We ended up getting a whole container with all of the flavours they had just so we could have a bite of each.
Simple delights and being able to enjoy treats so decadent are one thing I truly miss since going gluten free. I would love to be reunited with cupcakes again for my upcoming wedding, especially if I could make them on my own. I think it would be so much fun decorating them myself, not to mention making delicious creations no one else has to know are gluten free! 😉

Every time I think of cupcakes I think of my sister. As a kid, before diagnosis, cake always made me sick so I never ate it! Every time one of my classmates had a birthday they always brought in cupcakes for the class. I always put mine in my locker & gave it to my sister later. On my birthday my sister always helped me bake cupcakes to take in for my class & always test one just to be sure they where perfect! Recently I got an email from one of my former classmates saying he still remembers the German Chocolate cupcakes I had the one year & they where the best he has ever had & he misses my moms baked goods. I thanked him & told him I made them with my sister every time! I’d love to have a cupcake party now with cupcakes I can actually enjoy eating with my sister & friends! It’s been so very long since I’ve actually tasted cake I can’t remember the taste or texture but the fond memories of my sister are sweeter than any cupcake I missed out on! I’m sure of that! 🙂

I always loved vanilla cupcakes and icing. I haven’t made cupcakes since going gluten free, only muffins. We had a pumpkin muffin recipe that was really good this past fall, but I’d love to have a recipe book filled with (somewhat) healthy cupcake recipes I can make for gatherings with family and friends.

The best cupcakes ever are chocolate with chocolate coolwhip in the middle and hot fudge drizzled over top of of cool whip icing! The most amazing cupcakes ever and YES they were gluten free! After my son was diagnosed with celiac he thought the world was crushing before him. All he kept asking for was this one dessert he always got at a local restraunt , it was a hot cake with cool whip, fudge, vanilla ice cream. So while at school one day I experimented and I made these lovely cupcakes! He LOVED them and its now a cupcake we make often

I don’t really have a cupcake story but last weekend, I made my boyfriend’s mom a small gluten-free cake for her birthday and I covered it in fondant. My boyfriend put the cake in the car and the seat was sloped enough that the fondant slid right off the top. He felt horrible because he knew how long I spend on it. I couldn’t be mad at his sad face! The cake still tasted great though!

I started making cakes/cupcakes with my homemade frosting because they tasted better than any I could buy – not to say I loved to make and frost them with lots of frosting. My favorite is/was vanilla with butter cream frosting. I also have a love for carrot cake with cr. cheese frosting. When I was diagnosed with celiac, I couldn’t eat my favorite desert any more so decided to try making some. Unfortunately, I have failed over and over trying many recipes (rice flour) and none of them are really eatable. My daughter loves to bake. She loves to be creative with decorating cupcakes. She often sends pictures to my phone of her latest creation. She would love this cookbook. I can already imagine how great they will taste and how fancy they will be decorated. YUMMY!!!

“Are you kiddding???” “Stop the car!!! STOP. THE. CAR. ” We were headed back from a great night on the Oregon coast. Driving through the smallish town of McMinville, Oregon. “Gluten Free cupcakes McMinville, Oregon” the google search beckons. And then there’s more. “G.Free. Dairy Free. Nut Fre.. Allergen Free cupcakes!!! Red Velvet, Oranges, Ginger, Mint, Chocolate.” Could my life have menaing again. As I wipe frosting off my face I turn to Mike… “We need to come back to McMinville someday soon!”

Yum. Cupcakes. My favorite is red velvet with cream cheese frosting. I have yet to find a gluten free red velvet cupcake recipe that resembles the gluten red velvet cupcake variety.

I used to love red velvet cake before I found out I couldn’t eat gluten.. I would totally love a cupcake that replicated the flavor and color and was topped with the cream cheese icing.

My mother used to make me mint chocolate chip cupcakes with dark chocolate frosting. Yummy! It was one of the first things I learned to cook was baking….every cold winter day was perfect day to turn the oven on and learn a new cupcake, or muffin, recipe. Baking is such a joy, and being gluten-free has brought me back to those days in the kitchen hanging out with my mom baking from scratch.

Is there a person alive who doesn’t like cupcakes? I like all varieties and really like trying out new recipes. Cream cheese is always a nice addition, whether in the batter or as icing.

Since I already gave my favorite type of cupcake for the first week and I don’t really have a favorite cupcake memory (my family always had cakes and I’ve only had either once since going gf) I guess I’ll just say why I’d really like this book. My diet has shifted several times since going gluten free, as more and more foods were added to my restricted list. I found almond and coconut flour to be my go-to flours, both for taste and because they weren’t grains or other flours high in gluten cross-reactivity. With the latest restrictions I have yet to make a cake, cookie, or cupcake I liked. I’m hoping Elana’s cupcake cookbook will not only give me simple and delicious recipes to use, but also to help me better understand how to cook with almond and coconut flours.

My favorite memory of cupcakes, when I ate gluten is those cupcakes with the funfetti and then on the ice cream cone. I can no longer eat those, but boy do I wish I could. I work as a cake decorator now, so I make lots of cupcakes, just never for myself.

I remember that my Mom used holiday cupcake wrappers, except they were never for the right season… so sometimes we had halloween orange cupcake wrappers with our Easter cupcakes! This is a great memory of cupcakes!!

I love any of the amazing flavors from our local cupcake shop, Trophy Cupcakes! They have everything from red velvet and vanilla to chai cardamom and s’mores. These are the most amazing cupcakes but, unfortunately, they are not gluten-free. I have yet to discover a gluten-free cupcake as delicious as these, but this book may help me in my search!
