Exotic Broiled Fruit Plate
Dazzle your guests with this eye-catching, yummy brunch addition.
1 pineapple
1 ripe papaya
1 ripe mango
2 kiwi fruits
4 small bananas
4 tablespoons dark rum (check label for allergens!)
1 teaspoon ground allspice
2 tablespoons lime juice
4 tablespoons brown sugar
Trim back many of the pineapple leaves, leaving a few “tufts” on top - for decoration. Cut the pineapple vertically into eight slices (including the tufts / leafy sprouts).
Peel the papaya, cut it in half and remove the seeds. Cut wedges lengthwise.
Peel the mango and cut. Remove pit. Slice into wedges.
Peel the kiwi fruit and cut in half lengthwise.
Peel bananas and cut in half. Cut in half again vertically to make 4 total slices.
Place all fruits in baking dish.
Combine rum, allspice and lime juice. Spoon generously over fruit, cover and leave at room temperature for 30 minutes, turning and basting during process.
Preheat the broiler. Remove fruit from rum mixture and reserve. Place fruit on broiler pan, sprinkle with sugar and broil for about 3 minutes until beginning to brown.
Transfer to platter and drizzle with reserved rum mixture and serve. May be served with non-fat, gluten free vanilla yogurt (check label for allergens!) for dipping if desired.
