Chicken Provencal
The beauty of this recipe is that you can add any vegetables you (or the kids!) like - fresh or canned. It's a quick, easy and nutritious meal.
3 tablespoons olive oil
4 large chicken breasts, halved
Salt and pepper to taste
1 garlic clove, chopped
1 chopped onion
4 small sliced zucchini
¼ pound fresh sliced mushrooms
2 diced fresh tomatoes
½ cup gluten free chicken broth (Check label for allergens!)
Season chicken breasts with salt and pepper. Heat olive oil in large skillet on medium high. Cook chicken until browned on both sides. Add remaining ingredients and simmer for about 20 minutes or until chicken is no longer pink, stirring occasionally.
Serve with rice or gluten free pasta or noodles.
