Mango Salsa Swordfish
Lovely to look at, it’s true! But this yummy and nutritious dish is good for you too! Low calorie, high in protein—and the kids thought they didn’t like fish!
4 swordfish steaks
½ cup chopped fresh mango (or canned peaches)
½ cup chopped avocado
½ cup red pepper, chopped
2 tablespoons red onion, chopped
6 tablespoons (1/3 cup) lime or lemon juice – fresh or bottled
1 teaspoon finely shredded lime or lemon peel
1 tablespoon cilantro, chopped well
¼ teaspoon ground ginger
3 cloves garlic, minced
¼ cup white wine
½ teaspoon pepper
Salt to taste
Salsa:
Mix together mango, avocado, red pepper, onion, 2 tablespoons lime or lemon juice, cilantro, ginger and garlic. Cover and refrigerate.
Marinade:
Mix together remaining lime or lemon juice, lime or lemon peel, wine and pepper and salt.
Rinse and pat fish dry. Place fish in shallow dish. Pour marinade over fish, cover and chill for at least 1 hour, turning occasionally.
To cook fish, remove from marinade (discard marinade). Place fish on broiler pan and broil for approximately 5 minutes, flip and broil for another 5 minutes on the second side; broil until fish flakes easily with a fork.
Note: This can be cooked on a gas grill too for easier clean-up.
Top fish with mango salsa, serve and enjoy!
