Mexican Style Tossed Salad
For those of you who eat a lot of salad and are looking for a change, this one’s for you. Use low fat or no fat gluten free sour cream to make it more calorie conscious.
3 cups fresh lettuce – preferably romaine
½ cup fresh spinach
2 radishes, sliced
1 tomato, cut in chunks
1 small red onion, thinly sliced and halved
1 jalapeno pepper (or green chile for milder flavor), seeds removed and sliced
1 ripe avocado
½ cup gluten free cheddar or Mexican blend shredded cheese (Check label for allergens!)
1 tablespoon cilantro, chopped
Dressing:
1 cup gluten free salsa (Check label for allergens!)
2 tablespoons gluten free sour cream (Check label for allergens!)
Combine all salad ingredients in large salad bowl and toss. In small bowl combine salsa and sour cream and blend well. Pour over salad and toss or serve dressing on the side.
Makes 4 servings.
