Corn Quesadillas
A great economical snack for the kids or on Superbowl Sunday! Make a meal of it by adding your choice of meat---chicken, bacon or beef! And don't forget BeFreeForMe's Mexican Style Tossed Salad on the side!
2 small soft corn tortillas
1 cup gluten free cheddar or Mexican blend shredded cheese (Check label for allergens!)
¼ cup green onion, chopped
¼ cup green chilies, chopped
Garnish suggestions: sour cream, chopped tomato, gluten free salsa, guacamole
Preheat oven to 375 degrees.
Lay one tortilla flat. Sprinkle with cheese to cover entire tortilla. Add green onion and green chilies over top of cheese. Cover with other tortilla. Place on non-stick baking sheet and bake for about 15 minutes.
Slice into pie shaped sections and serve with garnishes. Makes a great appetizer or snack.
