Garlic Smashed Potatoes



Nut Free Fish Free Soy Free Gluten Free 

A perfect side for any meat or poultry dish. Great for holidays too. Note: Use less garlic to make kid-friendly!

2 pounds of baking potatoes
2 tablespoons olive or vegetable oil
¼ teaspoon dried oregano
3 garlic cloves, minced 
Salt to taste
1/3  cup milk (maybe a little more, but don’t put in too much milk)
4 tablespoons fresh chives, chopped

Preheat oven to 375 degrees.

Bake potatoes for 1 hour and set aside to cool for handling.   
        
Heat oil over medium heat. Add garlic and oregano and cook for about 5 minutes. 

Cut potatoes in half long-ways and spoon insides into bowl. Discard skins. Add oil mixture and salt to potatoes. Mash potatoes well. Add small amounts of milk to potatoes while mashing. Continue mashing until potatoes are fluffy. Stir in chives.

Serve immediately.
