“Your House” Fried Rice



Dairy Free Nut Free Fish Free Soy Free Gluten Free 

In Chinese Restaurants the specialty rice is often called the “House Fried Rice”. It changes from restaurant to restaurant depending on the chef. The versatility of this recipes allows you to adapt it to “your” house and allergies… by adding or taking out ingredients!

2 ounces of chopped cooked ham (check labels for allergens)
2 ounces of chopped cooked chicken
2 ounces of chopped cooked, peeled and deveined shrimp (Omit for fish free!)
3 eggs (optional) (Omit for egg free!)
Salt and pepper to taste
3 scallions, chopped
4-5 tablespoons oil
1-2 cup of peas (thaw out if frozen), broccoli, baby corns, mushrooms, etc.
1 tablespoon gluten free soy sauce (Check label for allergens! – Omit for soy free!)
1 tablespoon Chinese rice wine or sherry (optional)
1-2 cup white rice, cooked

Prep the meat and vegetables by cutting them into small pea-sized pieces. Put aside.

Heat about 3-4 tablespoons of oil in a wok or large skillet and stir fry the vegetables until tender. Add the meat and peas and stir fry an additional 2 minutes. Add the soy sauce and wine / sherry. Transfer to a large bowl.

Quickly whisk the egg in a bowl. Heat the remaining tablespoon of oil in the wok / skillet, add egg and lightly scramble. Add in the rice and stir well. Add 2 tablespoons of the scallions, and salt / pepper to taste. Add back in the meat / vegetables, mix and heat through.

Garnish with remaining tablespoon of chopped scallions.
