Sauteed Broccoli and Feta with Jalapeno Olives
The olives, capers and Marconi® brand Jalapeno Infused Oil give broccoli a whole new flavor! Serve with roast beef or sirloin. Omit feta cheese for dairy free.
1 pound broccoli
3 tablespoons Marconi® brand Jalapeno Infused Oil
3 cloves garlic, minced
¼ cup black olives, pitted and sliced
¼ cup green olives, pitted and sliced
1 tablespoon small capers, drained
Pinch of red pepper flakes
3 tablespoons feta cheese (optional) Check label for allergens! Omit for dairy free!
Trim broccoli into florets. Bring large pot of lightly salted water to a boil and add 1 tablespoon Jalapeno Infused Olive Oil. Cook the broccoli for about 2 minutes, (it will be crunchy) and drain.
Heat remaining 2 tablespoons of olive oil in large frying pan, add the garlic and broccoli. Over high heat, sauté for 1 minute, then add the remaining ingredients. Cook for 2-3 minutes longer. Sprinkle with feta cheese before serving.
