Rosemary Mashed Potatoes
The Marconi® brand Rosemary Oil replaces heavy butter found in most mashed potato recipes. Serve with Rosemary Infused Roasted Chicken.
About 1.5 pounds of potatoes - Peeled and cut into 1” chunks
1 tablespoon salt
2 tablespoons Marconi® brand Rosemary Infused Oil
½ cup milk
Salt and pepper, to taste
Place the potatoes in a large saucepan and add water so it is 2” higher than the potatoes. Add 1 tablespoon of salt and bring to a boil. Cook until potatoes are tender.
Drain, and transfer to a large bowl. Using a potato masher or large serving fork, mash potatoes until smooth. Add Rosemary Infused Olive Oil and milk. Continue to mash until all are combined.
Drizzle with a bit more olive oil before serving. Season well with salt and pepper.
