Rosemary Infused Roasted Chicken
The Marconi® brand Rosemary Infused and Dipping Oil allow you to make old fashioned Italian roast chicken right at home! Welcome comfort food! Serve with Rosemary Mashed Potatoes.
1 roasting chicken, approximately 4 pounds
2 tablespoons Marconi® brand Rosemary Infused Olive Oil
2 tablespoons Marconi® brand Dipping Oil
1 tablespoon fresh Rosemary sprigs, coarsely chopped
Preheat oven to 375 degrees.
Remove neck and giblets from chicken. Rinse chicken inside and out and pat dry. Using 1 tablespoon each of Rosemary oil and Dipping oil, rub the inside cavity of the chicken. Do the same on the outside of the chicken, placing some of the oil underneath the skin as well. Spread the chopped Rosemary all over the outside of the chicken and salt and pepper to taste.
Bake in a roasting pan for approximately 1-1/2 hours or until juices run clear.
