Broccoli and Pepper Frittata
Perfect for a brunch or light supper, with a side tossed salad. Add in additional vegetables and herbs to suit your taste!
6 egg whites
4 cups broccoli florets chopped into smaller pieces
1 7-ounce jar of roasted red peppers, drained well and chopped
3 clove garlic, minced well
1/8 cup scallions, chopped
½ cup onions, chopped
½ teaspoon basil, chopped well or dried
½ teaspoon black pepper
Salt to taste
In a bowl, beat the egg whites until frothy. About 1 minute. Add rest of the ingredients and blend well.
Lightly mist a 9” pie plate lightly with olive oil. Pour the egg mixture into the plate and bake for 25-30 minutes, or until the egg is set. Remove from oven and let sit for several minutes before slicing.
