Orange Oatmeal Granola Trail-Mix



Dairy Free Fish Free Soy Free Gluten Free 

A crunchy mix that is perfect with milk, but is good enough to be eaten plain as a mid-afternoon snack. Note: You can catch BeFreeForMe staffers enjoying this mixed with vanilla yogurt. Get creative and add in dried cranberries, apricots or pineapples!

1 ¼ cup shredded coconut
½ cup vegetable oil
1/3 cup maple syrup
Zest of 2 oranges
4 cups gluten-free oats
1 cups sliced almonds
1 cup chopped cashews, walnuts or other nut (optional. Omit for nut-free!)
1/3 cup sesame seeds
1 ½  teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/3 cup honey
1 cup of raisins

Preheat the oven to 375 degrees,

Spread the coconut on a baking sheet, and place on a center rack in the oven to toast lightly. This takes about 8-10 minutes. Make sure you stir the coconut frequently to toast all sides and prevent burning. (Note: watch the coconut carefully while browning! It browns quickly!)

In a saucepan, combine the oil, maple syrup and orange zest. Bring to a boil.

Place all the remaining of the ingredients, except for the raisins, in a large bowl, and mix well by tossing with your hands. Once mixed, add the syrup-zest mixture, and toss until the dry mix is well coated.

On two large baking sheets, spread the mixture evenly and thinly across both.

Bake in the oven about 15 minutes, stirring often to prevent browning unevenly.

Remove from the oven. Once cool, place in large mixing bowl and toss with the toasted coconut and the raisins.

Store in an air-tight container.
