Grilled Rosemary Potatoes
This delicious potato dish is not only easy, inexpensive and allergen free, but it is also clean-up free! Enjoy and rejoice!
6 medium sized potatoes, washed and sliced thin
3 tablespoons olive oil
3 tablespoons fresh rosemary, coarsely chopped
3 garlic cloves, minced
1/8 cup green onions, chopped
Salt and pepper to taste
1/4 cup warm water
Using 1 tablespoon of the olive oil, grease a 24” piece of heavy duty aluminum foil. Place the sliced potatoes in the center of the foil and season with the rosemary, garlic, green onions, salt and pepper.
Sprinkle the remaining olive oil and water over the potatoes. Fold the ends together to make a “packet” with a double fold.
Preheat gas grill to medium. Place the foil packet on the grill grates and cover grill. Grill for about 30 minutes, or until potatoes are tender, turning and shaking packet every 8-10 minutes.
Serves 4.
