Pesto Green Beans
Healthier than butter and tastier too, pesto is perfect as a veggie topper!
¼ cup of Classic Basil Pesto
3 tablespoons balsamic vinegar
1 pound of green beans, trimmed
Process the pesto and vinegar in a food processor or blender, until smooth.
Steam the green beans until crisp, either by microwaving in a covered microwave-safe bowl with 1” or water; or by steaming in a large pot with 1” of water and a steam basket.
Transfer the cooked beans to a serving dish, and add in the pesto. Toss to coat the pesto evenly.
Serve hot or at room temperature.
Serves 4.
