Toasted Garlic Shrimp

This recipe can be used as an appetizer or for a main course. Use the recipe found on BeFreeForMe for the Gluten-Free Bread Crumbs.

½ tablespoon olive oil, plus ¼ cup
1 cup Gluten-Free Bread Crumbs
1/4 cup fresh flat-leaf parsley, minced – plus a couple of sprigs for a garnish when serving
3 large garlic clove, finely chopped
Salt and pepper, to taste
About 1½ pounds large shrimp, peeled and deveined
Lemon wedges for serving

Preheat oven to 450 degrees.

With the ½ tablespoon on olive oil, lightly oil a large baking sheet.

In a bowl, combine the gluten free bread crumbs, chopped parsley, garlic and salt and pepper to taste. Add about 3-4 tablespoons of the olive oil, or enough to moisten the crumbs.

Arrange the shrimp in a single layer on the baking sheet, curling each into it’s natural “circled” shape. Spoon a little of the bread crumb mixture onto each shrimp, making sure you place some of the crumbs in the “center” of each circular shrimp shape. Once the bread crumbs are spooned on the shrimp, drizzle with a little more oil.

Bake for 10 to 15 minutes (amount of time depending on the size of the shrimp) or until the shrimp turn pink and the crumbs are lightly toasted and nicely browned.

Garnish with parsley sprigs and serve with lemon wedges.

Makes 4 servings as a main course; and serves 8-12 as an appetizer.
