Chicken Cacciatore (Pollo alla Cacciatora)
Cacciatore means "hunter" in Italian. The dish usually combines tomatoes, onions, mushrooms, herbs, bell pepper, and sometimes wine. Mangia!
¼ cup extra virgin olive oil, plus 1 ½ tablespoons
3 clove garlic, minced
3 chicken breasts, halved and skinned
½ green pepper, seeded and chopped
1 onion, chopped
4 fresh tomatoes, chopped
¼ cup white wine
1 teaspoon basil, chopped
1 teaspoon rosemary, chopped
1 bay leaf
Salt and pepper, to taste
Cooked rice or gluten-free noodles
Over medium-high heat, place the ¼ cup of the olive oil to a large skillet and saute the garlic. Next add the chicken, and cook for about 3-4 minutes per side to brown. Remove the chicken from the skillet, and place on a plate and cover with tinfoil to keep warm.
Add the onions, green peppers, and the 1 ½ tablespoon of the olive oil to the skillet and cook until the onions are transparent and tender.
Return the chicken to the skillet and add the tomatoes, wine, basil, rosemary, bay leaf and the salt and pepper. Cover and simmer over low heat for about 30 minutes, or until the juices of the chicken runs clear when cut into the thickest point.
Remove the bay leaf before serving.
Serve over rice or gluten-free pasta.
