Sweet Onion, Cranberry and Apple Bake
A crisp autumn day dinner side dish! Delicious with chicken or pork.
¼ cup apple juice
1 teaspoon cinnamon
1 teaspoon nutmeg
4 sweet onions, peeled and sliced into ¼” to ½” rings
4 large cooking apples, peeled, cored and sliced into ¼” to ½” rings
1/4 cup raisins
1/4 cup dried cranberries
¾ cup of gluten-free bread crumbs
Dollops of butter to top casserole before baking
In a small bowl combine the apple juice, cinnamon and nutmeg and mix well. Set aside.
In a 8” x 12” greased baking dish layer the onion rings and drizzle with the spiced apple juice mixture. Next add the apple rings on top, and drizzle more of the spiced apple juice mixture. Top with the raisins and cranberries and another drizzle of the spiced apple juice mixture. Lastly, sprinkle with the gluten-free bread crumbs and dot top with butter.
Bake at 300 degrees for about 1 hour, or until the onions and apples are tender and soft.
Serves 4.
