Cocoa Nutty Oatmeal Cookies
These no-bake cookies are quick and easy… plus, one pan clean-up! Use oats labeled as certified gluten-free.
2 cups of sugar
¼ cup unsweetened cocoa powder (Check label for allergens)
½ teaspoon cinnamon
½ cup milk
½ cup of butter
1 tablespoon corn syrup
¼ cup peanut butter (Check label for allergens)
2 cups gluten-free rolled oats (Check label for allergens)
In a saucepan combine the sugar, cocoa and the cinnamon. Next stir in the milk, and then add the corn syrup and the butter. Bring the mixture to a boil and cook for 3 minutes, stirring frequently.
Stir in the peanut butter until smooth. Next add in the oats, and mix well.
Return the mixture to a boil, and then remove from the heat. Using a wooden spoon beat the mixture until it becomes slightly thickened. Let stand for about 15-20 minutes, or until the mixture mounds.
Drop mixture from a teaspoon onto wax paper and cool.
Makes about 30-36 cookies.
