Countryside Meatloaf



Dairy Free Nut Free Fish Free Gluten Free 

The oatmeal in this meatloaf, keeps it moist and full of dietary fiber!

1 pound of ground beef
½ pound of ground pork sausage
1 onion, chopped
¾ cup certified gluten-free rolled oats
1/4 cup ketchup (Check label for allergens)
¼ cup barbeque sauce (Check label for allergens)
1 tablespoon Worcestershire Sauce (Check label for allergens)
1 egg
Salt and pepper to taste
4 slices of bacon (Check label for allergens)

Preheat the oven to 375 degrees F.

In a large bowl, combine the beef and the sausage; mix well. (Note: this can be achieved easily by wearing rubber gloves and mixing with your hands). Next add in the onion, oats, ketchup, barbeque sauce, and the salt & pepper to taste.

Slightly beat the egg, and add into the hamburger mixture and mix again.

In a 4” x 8” loaf pan, spread the meat loaf mixture evenly and pack down. Place the 4 (uncooked) pieces of bacon side by side down the length of the meatloaf.

Bake the loaf for about 30 minutes. Remove from oven, flip the bacon strips and cook for another 30 minutes.

Serve the meatloaf hot, or make meatloaf sandwiches the next day as leftovers.

Serves 4.
