Spiced Apple Cake
Easy as pie! Omit nuts to make nut-free and use butter alternative to make dairy-free.
¼ cup butter or shortening, plus extra for greasing pan (OMIT butter and use substitute for dairy-free)
1 cup of sugar
1 egg, beaten
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
½ teaspoon nutmeg
1 cup gluten-free all-purpose baking flour (Check label for allergens)
3 cups baking apples, peeled and cubed
½ cup chopped walnuts or other nuts (optional – OMIT for nut free)
1 teaspoon vanilla
Fresh whipped cream or vanilla ice cream (optional - OMIT for dairy free)
Preheat oven to 350 degrees F.
Grease an 8” square pan.
In a large bowl, cream the shortening with the sugar with a blender, and then add the beaten egg.
In another bowl, sift all the dry ingredients.
Slowly add the dry ingredients to the creamed sugar. Next add the apples, nuts (if using) and vanilla. Combine well.
Spoon into the prepared pan, and bake for 45 minutes or until fork comes out clean.
Serve hot or cold, serve plain or with fresh whipped cream or ice cream (optional).
Serves 9.
