Fruit Dip
Makes great fun dippin' and an easy way to make fruits a yummy dessert or snack!
1/2 cup dried apricots, chopped (Check lable for allergens!)
1 cup (100% orange) orange juice
1/2 cup (100% apple) apple sauce
1/2 cup vanilla low-fat yogurt (Check lable for allergens!)
1/8 teaspoon ground cinnamon
Dash of ground ginger
Combine apricots and orange juice in a small saucepan. Bring to a boil over medium heat. Stir often and cook until apricots are soft and liquid is absorbed - for about 15-18 minutes. Remove from heat; cover and cool.
Place apricot mixture and remaining ingredients in a blender or food processor; blend until smooth. Place in a small bowl; cover and chill. Serve with assorted fresh cut fruit (apples, pears & strawberries are good!).
