Slow Cooker Chicken Cacciatore



Dairy Free Nut Free Fish Free Soy Free Gluten Free 

An Italian favorite that is prepared in no-time! Serve with fresh steamed green beans, a tossed salad and gluten-free bread.

2 ½ pound broiler chicken, cut into pieces
1/2 cup of gluten-free all-purpose baking flour
¼ cup of vegetable or canola oil
1 medium onion, halved and thinly sliced
3 medium green pepper, thinly sliced
3 garlic clove, minced
Salt and pepper, to taste
3 bay leaves
1 16-ounce can of crushed tomatoes (Check label for allergens)
1 8-ounce can of tomato sauce (Check label for allergens)
¼ cup of white wine
¼ cup of Parmesan Cheese, optional (Omit for dairy-free)

Wash and pat dry the chicken pieces, and dredge in the flour to coat.

Heat the oil in a large skillet and add chicken and cook over medium heat until browned. Cook the chicken in stages if the skillet is not large enough.

Place the browned chicken, and stir in the onions, green pepper and garlic. Next add the spices, canned tomatoes and sauce, and the wine.

Set the slow cooker temperature on low (275-300 degrees F), cover and cook for 7-9 hours. Sprinkle with Parmesan cheese before serving, if desired (omit cheese for dairy free).

Serves 4-6.
