Slow Cooked Hearty Gluten-free Oatmeal
This recipe is great because you can mix-and-match ingredients based upon your allergens. Have the kids help you assemble the ingredients the night before, and enjoy a hearty family breakfast the next morning! Omit nuts to make nut free.
2 cups of milk
¼ cup of pure maple syrup or honey
1 tablespoon butter, melted
1 cup of gluten-free regular or Steel Cut oats (I use Bob’s Red Mill)
1 large apple, peeled and chopped into bite sized pieces (yield about 1 cup)
½ cup of raisins, dried apricots or dried plums
½ cup of nuts (walnuts, almond, pecans), chopped. (Omit for nut free)
1 teaspoon of cinnamon
2 teaspoons of brown sugar
Toppings:
Honey
Granulated sugar
Brown sugar
Maple syrup
Combine all the ingredients, except for the topping ideas, in a 5 to 6 quart slow cooker. Cover and turn cooker on low. Cook for 8-9 hours.
Stir before serving. Top with a drizzle of honey or maple syrup; or a sprinkle of sugars before serving.
Serves 6-8.
