Allergen-Free Oatmeal Raisin Cookies
These cookies contain no dairy, egg or nuts! Perfect for lunchtime snacking or for making into ice cream sandwich cookies. Enjoy!
1 cup of corn oil, plus extra to grease the cookie sheets
¾ cup of honey
¼ cup of maple syrup
2 teaspoons vanilla extract
3 cups of certified gluten-free rolled oats (Check label for allergens)
1 ½ cup of gluten-free all-purpose flour(Check label for allergens)
1 teaspoon baking soda
2 teaspoon cinnamon
1 1/2 teaspoon all-spice
1 cup of raisins
Preheat oven to 375 degrees.
In a large bowl mix together the oil, maple syrup, honey and vanilla.
In another bowl, mix together the oats, flour, baking soda, cinnamon & all-spice. Blend well and add to the oil mixture.
Next gently fold in the raisins.
Lightly grease the cookie sheets with the oil. Bake the cookies for about 8-10 minutes. Watch carefully since they will brown fast. Cookie less time for chewy cookies, and more for a crisper cookie.
Makes about 1½ dozen cookies.
