Sweet & Spicy Peach Salsa
The honey gives this salsa an unexpected sweetness, and the jalapeno and cayenne gives it a spicy kick! Serve over fish, chicken, or smoked sausage.
3 ripe peaches; peeled, pitted and diced
1 ½ medium red bell peppers, diced
1 jalapeno pepper, diced (Use caution and wash hand in hot water with soap after handing jalapeno peppers, or wear disposable gloves)
½ red onion, diced
½ to 3/4 cup of cilantro diced
3 tablespoons lime juice
1 ½ tablespoon honey
½ to 1 teaspoons cayenne pepper, depending on taste
Salt and pepper, to taste
Combine all ingredients in a large bowl. Mix well and refrigerate for 3-7 hours prior to serving.
Serves 4-6.
