Classic Tomato Relish
A classic relish recipe. Make extra to give to the hostesses of the barbeques you attend this summer!
1 pound tomatoes; washed, dried and chopped well
1 ½ medium yellow onions, chopped
3 stalks celery, chopped
1 green bell pepper, chopped
Salt and pepper, to taste – plus, 1 teaspoon of salt
1 cup cider vinegar
1 cup sugar
2 teaspoon mustard seed
1 tablespoon pickling spice
Place the chopped tomatoes, onions, celery and green pepper in a large bowl and toss well. Season with the salt and pepper and toss again.
In a small saucepan, place the vinegar, sugar mustard seed, 1 teaspoon of salt and the picking spices. Over high heat, bring to a boil. Reduce the heat and let simmer for 3-4 minutes. Remove from the heat and strain over the tomato mixture and stir well. Place the relish into cleaned covered jars. Refrigerate until used.
Yields about 4 ½ cups.
