Black Beans with Lime
A perfect allergen free side that is high in protein. The cilantro adds a coolness, and the chili powder a bit of spice!
1 tablespoon olive oil
2 scallions, white and green parts separated, thinly sliced
2 cans (16-19 ounces) black beans
1 teaspoon chili powder
1 tablespoon fresh lime juice
¼ cup chopped cilantro
¼ cup chopped green bell pepper
Coarse salt and ground pepper to taste
Rinse and drain black beans and set aside. In a medium saucepan, heat oil over medium. Add white part of scallions, and season with salt and pepper. Cook until softened, about 3 minutes. Add black beans, chili powder, and a splash of water. Cook until warmed through, about 5 minutes. Remove from heat, and stir in lime juice and cilantro; season with salt and pepper. Serve garnished with green part of scallions.
