Maple-Balsamic Figs with Bacon, Goat Cheese and Pecans

Elegant and sophisticated – yet so easy. A perfect “make-ahead-and-just-pop-in-the-oven” type of appetizer that lets you spend more time with your guests! Omit pecans for nut-free.

6 slices of maple (or plain) bacon (Check label for allergens)
12 small fresh figs, halved lengthwise
About 2 tablespoon balsamic vinegar
About 1 tablespoon of maple syrup
1/3 to 1/2 cup crumbled goat cheese
¼ cup of chopped pecans (Optional – omit for nut-free)


Preheat the oven to 350 degrees F.

In a skillet, slowly cook the bacon slices over medium-low heat until the bacon is slightly crisp but still “pliable”. When done, transfer to paper towels to lightly drain. Cut each slice of bacon into 4 pieces.

In a small bowl whisk the balsamic vinegar and the maple syrup together until well blended.

Arrange the figs in a baking dish, with the cut sides up, and brush them with about half of the balsamic-maple mixture. Next place a piece of the cooked bacon on top of each fig and sprinkle with a bit of goat cheese and the chopped pecans (omit pecans for nut-free). End by drizzling a very small amount of the balsamic-maple mixture on top.
 
Transfer the dish to the oven and bake for about 8-10 minutes or until cheese is toasted on top.
Serve hot.

Serves 8-12.
