Pimiento Cheese Dip
A great game day dip. Serve with fresh vegetable sticks or gluten-free crackers!
16-ounces of shredded cheddar cheese
12-ounces pimientos drained and chopped
1 small red onion, chopped very well
5 garlic cloves, minced
2-3 green onions, chopped
1¼ cup mayonnaise (Check label for allergens!)
Salt and pepper, to taste
In a large bowl, combine the shredded cheese, pimientos and red onion.
In another bowl, garlic and the green onions with the mayonnaise, then add to cheese / pimientos mixture and blend well.
Add the salt and pepper, to taste and blend again. Place in the refrigerator to chill few hours before serving.
Serve with crisp, fresh veggie sticks or gluten-free crackers.
Make about 3 cups.
