Vanilla Hot Chocolate
Homemade Hot Chocolate made the old fashioned way is a special treat on a cold winter day! Replace vanilla extracts with other flavored extracts, to enjoy more flavors.
¾ cup sugar
¾ cup cocoa powder
½ teaspoon salt
½ cup hot water
8 cups whole milk
2 teaspoon vanilla extract (check label for allergens)
1 cup mini-marshmallows or marshmallow fluff (optional)
1/2 cup chocolate shavings (optional)
In a saucepan, combine the sugar, cocoa powder and salt. Heat until blended over medium-high heat. Next add the hot water little by little, while stirring. Continue to stir until mixture comes to a boil, and continue to stir for another 3 minutes.
Reduce to medium heat, and slowly add milk. Continue to stir being careful the mixture does not scald. Once the mixture is hot enough and fit for drinking, remove from heat. Add vanilla and blend with a wire whisk.
Pour into mugs and top each with a dollop of whipped cream or marshmallow fluff and chocolate shavings.
Serves about 8.
