Oven-Fried Chicken
Ground flax seed and gluten-free crackers or corn flakes are used to add crunch to this crispy chicken dish.
1 egg, beaten
3 tablespoons non-fat (skim) milk
1/2 cup ground flax seed (flax seed meal)
1/2 cup gluten-free crackers OR gluten-free corn flakes - finely crushed (Check label for allergens)
1/4 teaspoon black pepper
1 tablespoons dried parsley flakes
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon salt
2-3 pounds chicken pieces
2 tablespoons melted butter (or omit for a lower-fat version)
In a small bowl, combine the egg and milk.
In a shallow container, combine the ground flax, gluten-free cracker or
corn flake crumbs, pepper, parsley, chili powder, garlic and salt.
Skin the chicken and rinse with warm water. Pat dry.
Dip the chicken pieces into the egg mixture; coat with the crumb mixture.
Place the chicken on a greased 10 x 15” baking pan so pieces do not touch.
Drizzle the chicken pieces with melted butter.
Bake in a preheated 350 degree F oven for 45 minutes, or until chicken
is tender and no longer pink. Do not turn chicken pieces while baking.
