Gluten-Free Edamame Salad
Delicious and refreshing. A great summertime salad.
Dressing:
1/3 cup fresh lemon juice
2 tablespoons Dijon mustard (Check label for allergen)
3 tablespoons olive oil
Salt and pepper, to taste
Salad:
One-1 pound bag of frozen, shelled edamame
3 cups frozen or fresh corn kernels
1 red bell pepper, chopped
1/4 cup finely chopped red onion
¼ cup finely chopped, fresh cilantro
2 tablespoons fresh chopped basil
Combine all of the dressing ingredients and whisk well. Cover and place in the refrigerator.
Prepare the salad ingredients by defrosting the edamame per the package directions. Drain in a colander and rinse with cold water. Drain thoroughly and pat to dry with a clean dry cloth towel, or paper towel.
Next combine the salad ingredients in a large bowl and toss.
Add the dressing ingredients to salad. Toss gently to coat. Keep refrigerated until ready to enjoy.
Serves 6 to 8.
