Feta Meatballs
These meatballs are economical and tasty! The use of brown rice, eliminates the use of more costly ground beef. The feta adds a Mediterranean flair that makes the flavor go from ho-hum to yum-yum!
2 cups cooked brown rice
1 teaspoon Italian seasoning
¼ cup, plus 1 tablespoon crumbled feta cheese
1 pound ground beef
1 cup of Tomato or marinara sauce, plus more to serve for dipping if serving as an appetizer (Check label for allergens)
Preheat oven to 450 degrees F.
In a large bowl combine the cooked rice, Italian spice, and 3 tablespoons of the feta cheese. Toss to mix. Next add in the ground beef, and mix well until all is combined.
Prepare a large baking dish with a slight coat of oil.
Using your hands, make round 1 ½” meatballs. Place in the prepared baking dish in a single layer. When all meatballs are made, drizzle them with the cup of tomato or marinara sauce (this will keep them moist when cooking).
Cover the pan with foil, and bake for about 20 minutes or until the meatballs are cooked through. Remove from the oven, and sprinkle with the remaining feta cheese. Uncover and put back in the oven until the feta melts, or for about 2-3 minutes.
If serving as an appetizer, serve with the small bowl of warmed marinara sauce or tomato sauce dip.
Serve as an appetizer, or make a meal with them and serve with fresh veggies and a brown rice side.
Serves about 6-8 as an appetizer.
Serves 4 as a meal.
