Green Beans with Lemon Herb Butter
A great springtime side. Great paired with chicken, pork or beef.
1 pound fresh green beans; washed, ends trimmed and cut into 2” pieces
4-5 tablespoons butter
3/4 cup onions, minced
3 clove garlic, minced
1/2 cup celery, minced
½ cup parsley, minced
2½ tablespoons fresh lemon juice
¼ teaspoon dried rosemary
¼ teaspoon dried basil
Salt and pepper, to taste
Steam the green beans, until crisp and bright green in color. When done, drain, and cover to keep warm.
While the beans are cooking, melt the butter in a skillet over medium-high heat. Add the onions, celery and garlic and cook for about 5 minutes until the vegetables start to soften. Next add the parsley, the herbs, and the lemon juice. Reduce heat, cover and simmer for 10 minutes. Just before serving, toss the green beans with the lemon-herb butter. Serve in a large bowl.
