Broiled Pear and Apple Butter Crostini with Goat Cheese and Rosemary
This crostini is sweet! The pears and apple butter mate well with the tangy creamy goat cheese. (The Broiled Pear and Apple Butter Crostini with Goat Cheese and Rosemary is at the top left of the photo above.)
1/2 loaf of Gluten-Free Baguette, sliced into 1/4” to ½” slices at a 45 degree angle (about 8 slices) - Check label for allergens
3 tablespoons olive oil, divided
½ Bartlett pear, sliced thin
3 tablespoons of Apple Butter (I use Trader Joe’s brand)
½ cup of crumbled goat cheese
1 spring of rosemary
Brush the baguette slices with 2 tablespoons of the olive oil. Broil until a golden yellow. Remove and set-aside.
Brush the sliced pears with the remaining tablespoon of olive oil. Place under broiler for about 5-6 minutes, or until the pears start to brown. Remove and set aside.
Spread Apple Butter on each toast. Top with a slice of broiled pear, and a sprinkle of goat cheese. Top each with a small sprig of rosemary leaves.
Yields 6-8 crostinis.
