Lime Chicken with Tarragon and Oregano
This is a quick and easy chicken dish that can be prepared in the broiler or on a gas grill. Bonus: Free of the top 8 allergens!
4 boneless & skinless chicken breast halves
¼ cup olive oil
1-2 teaspoon sugar
4 tablespoons fresh lime juice
1 teaspoon dried oregano
3 teaspoons dried tarragon
Salt and pepper, to taste
Place the washed chicken breasts in a baking dish. Pat dry.
In a small bowl whisk together the olive oil, sugar, lime juice, oregano and tarragon. Pour over the chicken breasts. Cover tightly and refrigerate for at least 1 hour.
When ready to serve, preheat the broiler (or a gas to medium-high heat). Transfer the marinated chicken to a
broiler pan (or place directly on the grill is using a gas grill). Season well with salt and pepper, and broil until cooked through, about 4-5 minutes per side depending on thickness.
