Apple Chicken Salad
Great served on gluten-free rolls or on a bed of fresh salad greens.
½ cup mayonnaise (Check label for allergens!)
1 tablespoon honey
½ tablespoon maple syrup
Salt and pepper, to taste
2 ½ cups of cubed cooked boneless breast of chicken (can be grilled, baked or boiled)
½ cup celery, chopped well
1 red apple, diced fine
½ cup of sliced almonds (optional omit to make nut-free)
In a small bowl, whisk together all of the dressing ingredients, cover and refrigerate. Note: dressing can be made 24 hours ahead of serving, if desired.
When ready to serve, toss together all of the salad ingredients in a large bowl. Top with the dressing, and mix until well blended. Cover and refrigerate until ready to be served.
Serve with gluten-free rolls, or on a bed of lettuce.
