Crispy Brown Rice, Salmon & Avocado Sushi Roll
Have fun making sushi at home! Gluten-Free and delicious!
Yield: 3-4 Rolls
1 cup brown rice
1/3 cup rice vinegar
1/2 cup Erewhon Crispy Brown Rice (gluten free)
Approx 1 1/2 full size sheets nori seaweed, or 3 half size sheets
1/2 cup wild smoked salmon (cut thin lengthwise)
1/2 cup avocado (cut thin lengthwise)
1/4 cup shredded carrots
1/4 cup green sprouts
On the side:
tamari sauce (wheat free)
wasabi
For rolling:
- 91/2" x 91/2" bamboo rolling mat
- cling wrap
Instructions:
1. Cook brown rice in rice cooker or a 2 quart sauce pan (approx 45-55 minutes)
2. When done, stir in 1/3 cup rice vinegar, mix well, rice will become sticky.
3. Transfer rice to a square glass pan, using a non-stick spatula - spread evenly on pan to cool down to room temp.
READY TO ROLL: RICE SIDE OUT
Lay down a square of cling wrap (same size as bamboo mat) on a flat surface, then lay down bamboo mat on top, and then lay another same size square of cling wrap on top of bamboo mat.
cut full size nori sheet in half and lay down shiny side up, horizontally so that widest end is facing you.
Spread rice on top of nori sheet - approx 1/4" thick covering evenly, then carefully flip over so now the nori sheet is rough side up.
Add your filling, leaving about 1" space at the end furthest away from you: salmon, avocado, shredded carrots, green sprouts...lay the filling lengthwise, so it is easier to roll.
begin to roll, using the cling wrap to pack the contents as you roll.
use a little water on the 1" space to seal the end of the roll
Lay some of the Erewhon crispy brown rice cereal (gluten free) on a flat plate
take the roll and roll it on the plate so that now it is covered in crispy brown rice - adjust as needed
READY TO ROLL: RICE SIDE IN
Follow same directions as #1 above
Cut full size nori sheet in half and lay down rough side up, horizontally so that widest end is facing you.
Spread rice on top of nori sheet - approx 1/4" thick covering evenly. Leave about 1" space at the end furthest away from you.
Add Erewhon Crispy Brown Rice cereal covering evenly on top of rice. - adjust as needed

Begin to roll, using the cling wrap to pack the contents as you roll.
