Easy Pork Satay



Dairy Free Fish Free Gluten Free 

Serve over white or brown rice. Make extra marinade sauce for dipping!

Marinade:

2 tablespoons creamy peanut butter

¼ cup gluten-free soy sauce

3 tablespoons lemon juice

1 ½ tablespoons finely chopped onion

1 tablespoon brown sugar

2 clove garlic, minced

2 tablespoons ground coriander

1/8 teaspoon cayenne (or more or less to taste)

Salt and pepper, to taste

 

1 ½ to 2 pounds boneless pork

Olive oil

 
Directions:

In a medium bowl, mix all the ingredients of the marinade. Blend well.

Cut the pork into strips or small chunks and toss with the marinade. Cover the bowl and marinade for several hours to overnight.

When ready to prepare, skewer the pork and cook over a medium gas grill for about 22-25 minutes, or bake in a 350 degree preheated oven for about 40-45 minutes, or until cooked through. Baste the pork with the marinade during the cooking time.

Serves 4.
